Best Malatang in Sydney

Malatang is an ancient Chinese dish which had been eaten for thousands of years, and passed from generation to generation. It consists of selecting fresh ingredients cooking it in a spicy and flavourful broth. When I was younger, I had to buy an expensive plane ticket to China whenever I felt like eating MLT. However, due to great technological advances in recent years, we are are now only a train ride away from enjoying MLT from the comfort of Sydney.
When someone says "I don't like malatang", they are wrong. They simply have not tried an optimal combo of sauces and ingredients in a good malatang restaurant.

6. Ma La Bang, World Square, Townhall

This MLT resturant gave themselves the punny name "Ma La Bang". Bang means great in Chinese, however, it does not apply to their food here, which is why this one is bottom of my list.
Located in the center of Sydney in Townhall World Square, this restaurant is very easy to get to, however, that is useless because I do not recommend for anyone to ever go there.
There are a bunch of reasons why this place sucks. First of all, this is the only MLT restaurant in Sydney to soak their vermicelli noodles in water, to make us pay triple the price for our vermicelli.
After paying a premium for the meal, what you get is an oily, weird tasting abomination. Worst MLT in Sydney by far.

5. Funhouse Malatang, Hurstville
This recently opened Malatang restaurant is the definition of average. The soup base is tasty, but not outstanding. Like Malabang, Funhouse MLT's soup is on the oily side.
However, Funhouse MLT costs slightly less than other MLT at $10 per 500g, which is very good.

4. Bian Dang Malatang, Wolli Creek
Bian Dang Malatang is a solid 7/10. The broth has a deep savoury flavour, and comes in a nice looking pot. However, you have to add the sauces by yourself.
There are many things that you can DIY, but MLT sauces is something that should be left to the professionals.

3. Jia Jian Cheng Chu Malatang, Hurstville
This is one of my favourite MLT resturants in Sydney. The soup is a bit more savoury than other MLT restaurants, and they make their own special chilli which tastes really good. This restaurant gives you a generous serving of coriander, which compliments the numbing spicy flavour.
They also give free drinks to loyal customers, which is another bonus. The only downside to this restaurant is the lack of seats, so it will be hard to eat here during peak hours.

2. Aroma Street, Wolli Creek
This newly opened restaurant in Wolli Creek exceeded all expectations. First of all, there is no minimum threshold for ingredients, which shows that they are not a greedy restaurant. They also feature many rare ingredients, such as cooked beef slices and prawn dumplings.
The best thing about this MLT is the quality of their meat slices. They definitely use a different supplier to other MLT, as the meat is much softer and tender. Usually, I only eat beef, but this restaurant's lamb and pork are also top tier.

1. Yang Guo Fu Ma La Tang
Yang Guo Fu does the best Malatang in Sydney. Luckily for us, YGF has many different shops all over Sydney, in Chatswood, Hurstville, Burwood, Eastwood, Darling Harbour and Kensington.
When the staff ask you "how much sauce", you say "the usual", as these highly competent professionals are trained to know the optimal amount of each sauce down to the milligram.
Yang Guo Fu makes their own garlic sauce and sesame paste, and the synergy between these two sauces create an explosion of flavour inside your mouth which has been scientifically proven to be the best taste ever known to man kind.
The pork based broth is a top secret recipe passed down from the Qin Dynasty, and only Yang Guo Fu himself knows the exact ingredients.
We were born too late to explore the Earth, too early to explore the universe, but we were born just in time to taste Yang Guo Fu Ma La Tang.
